Avocado Egg Salad

I created this recipe to use my extra avocados, and I was amazed by its rich, buttery texture paired with the zesty kick from onions, pickles, and mustard. My honey loved it, too!

Ingredients

  • 6 hard-boiled eggs, peeled
  • 2 avocados – peeled, pitted, and cubed
  • ½ cup minced red onion
  • 3 tablespoons chopped sweet pickles
  • 1 tablespoon prepared yellow mustard
  • ⅓ cup mayonnaise
  • salt and pepper to taste

Steps

  1. Mash eggs lightly with a fork in a bowl. Add avocado, onion, pickles, mustard, and mayonnaise. Gently mash together until just blended. Season to taste with salt and pepper.
